Owner-chef Nobu Matsuhisa gained a reputation for outstanding, albeit expensive, sushi and Japanese-style seafood dishes by insisting on the freshest ingredients. While tempura and udon soup are on the menu, specialties, including sea urchin with shiitake mushrooms wrapped in a spinach leaf; baby squid sautéed with asparagus and garlic; and smoked eel with caviar, stand out. Daily specials include fresh fish flown in from Japan to accentuate the flavor and his staff's creativity.
