Wafu-Ramen Yondai-me Hinodeya is the official name of this restaurant. The clear umami-rich broth consists of katsuo, kombu, scallops, dried small sardines and chicken (note there is no pork used!). A vegan broth uses miso paste and soy milk as its base. Side dishes are equally delicious, such as fried yamaimo, kara age and oysters. While everything sampled was wonderful, I could come here just for their desserts and teas.
