This is celebrity chef Martin Yan's first restaurant. It's 'dai pai don,' Hong Kong-style street food stalls encased in trendy decor. Cooking is on display in open kitchens that line one wall of the restaurant. You can watch noodles being made by hand and the amazing, sizzling wok action. The Dungeness crab is served six ways by Province style. Woks are washed after each cooked ingredient to clean off the oil. Resulting dishes are delicate, and each ingredient shines. Dim sum and noodle soups are also on the dinner menu.
