Chef and co-owner, Lon Symensma, traveled to France, Spain and Asia in order to hone his culinary skills. Luckily for us, he settled in Denver. The exciting menu features fusion at its best. The standout dish for the evening was actually a "small bite," the soup dumplings with sweet onions and Gruyère. Basically, this is the best French onion soup I've ever had. The soup is carefully packaged in dough and steamed in a bamboo basket—a traditional Chinese technique, but with European ingredients. Wait for the dumplings to cool, then pop the whole thing in your mouth. The smooth dough pops and the intense flavor of onion, beef broth fills the taste buds and the subtle Gruyère adds a nice finish. Larger plates include rack of lamb, Diver scallops and Colorado wagyu beef. The food is definitely the highlight here. The modern decor was sleek and comfortable. This would also be a perfect place to enjoy a specialty cocktail and a few small bites.
