The fast-casual restaurant has some self-serve aspects. Order at the counter, find a table and soon your order will be delivered. The pit master uses both Texas and Carolina barbecue techniques and several in-house barbecue sauces are available which includes a vinegar-based sauce, a mustard sauce and one wildly hot barbecue sauce. If you can't decide what to order, try the "San Marco" platter which comes with a sample of your choice of three meats plus sides. Fatty and lean cuts are available.
