Classic Historic. This is yet another successful dining concept from celebrity Chef Jean-Georges Vongerichten. This time the focus is on small plates with heavy Spanish influences, which makes sense, since the supper club-style dining room is in the shape of a bullring. The menu has been designed to give the guest the opportunity to sample various flavors, seasonings and ingredients at a leisurely pace. If you've never tried charred octopus or maitake mushrooms, now's your chance to try them. There's copious use of locally grown produce and specially purveyed items, such as the Cargill beef. If you are lucky enough to plan your visit during the monthly wine dinners, consider yourself fortunate. The signature dessert is warm Valrhona chocolate cake with vanilla ice cream; however I found the mint-basil panna cotta with blueberry ice cream to be unforgettably out-of-this-world.
