With a name meaning stand before the fire, this steakhouse uses that technique to grill its 28-day aged beef. The menu is diverse and the presentation creative. Highlights include local steelhead trout, succulent Alaskan black cod and juicy porterhouse steak for two carved tableside. Most food is homemade, including the butter for the popovers and the custard for the ice cream. The contemporary décor reflects the natural beauty of the Palouse Prairie with the use of natural materials. The ice cream N2O is a must have—homemade vanilla custard flavored with your choice (mine was Jack Daniels and maple sprinkled with cayenne pepper), then flash frozen using liquid nitrogen. The tableside preparation is dramatic with white vapor from the nitrogen billowing from the bowl.
