Chef Grant Achatz, of molecular gastronomy fame, has created an artistic dining experience—theater of the table, so to speak—focusing on different periods of culinary history from around the globe. In what was once an old warehouse, this trendy eatery's interior is enhanced by a snake-skin padded wall and intimate lighting. Enjoy watching well-trained servers enhance each meal; this is art after all. Reservations can only be made through the online booking system and must be prepaid. Availability dates are released online one to two months ahead of time. Menu prices vary based on whether you are dining at the chef’s table or during a popular date and time. Wine pairings are extra. A 20 percent service charge is automatically added to the bill.
