It is apparent that chef-owner Paul Virant is passionate about the freshness and quality of his food. The menu is filled with regionally produced and organically grown items with house-made preserves, pâtés, and many pickled herbs and vegetables. The house-made sausages, pastrami, bacon, jams and sauces also add to the creativity of the meal experience. The waitstaff is engaging and appear as interested in the food as the kitchen staff in providing helpful descriptions. All of this takes place in a simple yet refined dining room with an industrial ceiling and floor. It has crystal sconce lighting, white-painted walls, cloth-covered tables and black-framed photographs as artwork.
