Historic. Famed New York restaurateur Chris Cannon has led a small army in smartly renovating this ornate 15,000-square-foot mansion and designing a remarkable multi-floor eatery with distinct outlets. The fine dining areas have high-quality menus which might include Hudson Valley foie gras, yellowtail crudo, veal osso buco, grilled venison and slow-roasted Long Island duck - all are standouts. There is also a modified but nicely appealing menu at the splendidly ornate cocktail bar. Included on some select menus are sommelier wine pairings from a more than 400 bottle wine cellar. Service is casually refined and much of the produce and some shellfish are sourced locally. The dining concepts are uniform, share some menu items and excel in providing the rarefied ambience of a long-ago era when an elite first poured into this area of New Jersey. A lively raw bar and wood-paneled retro pub each complement the other and provide menus which include oysters, lobster tail, salads, steaks and burgers. The grand interior staircase and the oversize windows looking out to a stately reflecting pool are truly impressive. Mr. Cannon and his partners have rekindled the magic of a long dormant golden age in Morristown.
