The motto here is "organic, local, natural," but it might as well be just plain delicious. The St. Louis-style ribs are tender and succulent, and the pulled pork is also excellent, but it would be a travesty to eat here and not have the double-smoked brisket burnt ends. The setting is simple, but the service is friendly and engaging. This is also a full butcher shop where they sell what they cook, and they cook what they sell: premium organic, grass-fed, hormone-free meats from local producers.
