In Colavita Center within the Culinary Institute of America, students in training let patrons escape to the Old World and indulge in rich, hearty Italian flavors. The changing menu reflects seasonally available foods with detailed presentation such as gelato of chicken which has crisply sautéed, yet juicy, pieces of chicken served with roasted, rosemary new potatoes and flash-fried slivers of zucchini. The student servers bring to the table their enthusiasm while honing their skills. The Tuscan Villa inspired building features a two-story central dining room overlooking the herb garden. Venetian chandeliers, terra cotta flooring and exposed wood beams add appeal. This is one of the four restaurants located on the campus of the renowned Culinary Institute of America just outside of Hyde Park and Poughkeepsie.
