First, a vocabulary lesson—the food will wait. A churrascaria is a Brazilian steakhouse where meats are typically cooked in churrascos, or barbecue pits, fired by either wood or charcoal. Most churrascarias offer rodizio service (here's where it gets fun). Rodizio is another way to say "all you can eat" but with a bit more flair. Passadors—knife-, skewer- and meat-wielding waiters—walk the dining room proffering all sorts of grilled meats, carved onto plates at the tableside.
