The brick in the restaurant name comes from Himalayan salt bricks which chef Burke uses to cure his food and to the brick-and-mortar facades of the surrounding inner city location. Inside the hotel lobby a creative menu is served up with such standout items as sea scallops in almond purée and white anchovies, lobster dumplings and candied bacon appetizer. There is a selection of flatbreads and salads which are good for grazing while enjoying the people watching in the hotel lobby. The lollipop tree is a conversation piece in itself for after dinner.
