The master chefs will tailor the menu to your particular preferences. The daily specials, and individual items, are printed on a one-page photo-copied sheet handed to each guest upon being seated at the sushi bar. It describes the origin of that day’s fish, from various regions off Japan’s waters; or, from South America, Alaska, Maine, Idaho, the North Atlantic or Mediterranean. The simple, unpretentious page gives a road map as to the sometimes subtle and other times robust textures of the superior meal which is about to be served by hand to you by a master chef.
