In a pastoral setting, this country manor's distinguished cuisine reflects seasonal and regional specialties whenever possible. Dishes are prepared with fresh ingredients, including those harvested in on-site organic gardens, foraged regionally or provided by trusted specialty purveyors. Offerings may include beef, lamb, pork, duck, chicken, trout, scallops, shrimp and lobster to name a few. Sweetbreads, foie gras, truffles, caviar and artisanal cheeses may figure into the mix as well. The staff is highly knowledgeable with respect to the menu selections as well as the chef's preparation techniques. They are also adept at assisting diners choose the best wines to complement their meals. More than 1,000 wines are cellared here and include both imported and domestic offerings.
