The casual eatery strips away traditional fine-cuisine formality. Fresh, high-quality ingredients factor into such dishes as duck with foie gras, which is cooked in a can and opened at the table; poutine (fries, curd cheese, foie gras and gravy); pied de cochon (pig's feet) stuffed with foie gras; and venison tartare. The fine wine list includes by-the-glass and bottle choices. Fresh seafood is kept on ice before cooking and then carefully prepared and served on multi-tiered dishes.
