Guests are treated to continual tableside service, as roving gauchos entice with pieces of 14 cuts of marinated beef, pork, lamb, poultry and fish. The traditional Brazilian cocktail—the Caipirinha—is prepared tableside with fresh limes, sugar and Brazilian rum. Also part of the meal, the salad bar lines up nearly three dozen items. Every table gets a dish of cheese-topped mashed potatoes, fried bananas, polenta and cheese bread. Last is the roving dessert cart loaded with delicacies.
