Chef and co-owner, Lon Symensma, traveled to France, Spain and Asia in order to hone his culinary skills. Luckily for us, he settled in Denver. The exciting menu features fusion at its best. The standout dish for the evening was actually a "small bite," the soup dumplings with sweet onions and Gruyère. Basically, this is the best French onion soup I've ever had. The soup is carefully packaged in dough and steamed in a bamboo basket—a traditional Chinese technique, but with European ingredients.
