Flavors of the South The French- and Italian-influenced cuisine of Nice is complemented by the sunny flavors of southern France. Look for an array of fish and seafood. Vegetable dishes include salade Niçoise (made of lettuce, anchovies, tomatoes, hard-boiled eggs and black olives) and ratatouille (Mediterranean vegetable stew), which were created here. Also try mesclun, a bitter selection of wild leaves. Stuffed vegetables and zucchini flowers fried in batter accompany grilled fish and meat. Estocaficada is a Niçois dish made from dried Norwegian cod and tomatoes. Socca, a type of pancake made from chickpeas, and pissaladière, an onion and anchovy tart, make good light lunches. The area produces several wines, Château de Bellet and Villars among them, and there's an international selection of wines and beer. |
