Historic. As an extension of a historic Denver icon, the dining room doesn't disappoint. Items reflecting the time of the exploration of America hang on the walls along with a few things reportedly having belonged to Napoleon. The cuisine, however, is much more modern. Menus change routinely but include foie pancakes with wild huckleberry, caramelized shallot and syrup, and Colorado pork with smoked hominy, feta, peaches, corn and jalapeño. Take time to admire the hotel before or after dinner. Jackets are preferred but are not required.
