What is a Churrascaria?

‘Churrasco’ is the Portuguese word for ‘barbecue,’ and a churrascaria refers to a restaurant where a variety of meats are cooked over a barbecue grill or rotisserie. In most modern churrascarias, meat waiters known aspassadores bring skewers of barbecued meats—beef, pork, lamb, chicken, duck, sausage—and fish from table to table. There’s also typically a salad bar with cold dishes and sides.
