The name of this eatery comes from the Italian word for birch, which is used in the huge wood-burning oven. The kitchen makes almost everything from scratch or sources locally, including sausage, cured meats, sauces, bread and pizza dough. Some of the ingredients come from the chef's own garden. Appetizers include items such as Humboldt squid or wild mushrooms on toast as well as charcuterie, cheeses and beautiful gourmet salads. The Neopolitan-style pizzas are highly creative.
